Steven Speed is one of Sydney’s most experienced hoteliers, with 39 years in the hospitality industry and more than 34 years as a liquor licensee. As Director and owner-operator of the Fortune of War and Russell Hotel in The Rocks, Steven has built a reputation for operational excellence, industry leadership, and a passion for preserving and enhancing the pub experience.
Throughout his career, Steven has managed and held licences for some of New South Wales’ most iconic venues, including Coogee Bay Hotel, Crest Hotel and Bourbon in Kings Cross, The Steyne Hotel in Manly, and several major hospitality venues in Western Sydney. His extensive experience spans independent hotels, large-scale operations, and hotel groups across metropolitan Sydney.
Beyond venue operations, Steven has been a leading advocate for the hospitality sector. He has served as Chair of the Sydney City Liquor Accord for the past 11 years, overseeing the largest accord in NSW, and represents the industry as a delegate to the AHA NSW Council. He also played a key role with PMNSW in developing and introducing the successful alfresco dining pilot, which has since been adopted by pubs, clubs, cafés, and restaurants throughout NSW.
Outside of work, Steven enjoys spending time with his family, CrossFit training, muscle cars, and pursuing his passion for delivering exceptional quality draught beer.
